Description
Hand-carved 80-prong bamboo chasen from Takayama. Produces a fine, stable foam in seconds. The essential tool for a proper matcha ceremony.
How to prepare
- 2 g: two bamboo scoops, sifted into the bowl.
- 70 ml: water just off the boil.
- 80 °C: cooler water gives a sweeter bowl.
- 15 sec: whisk in a quick W until finely foamed.
Storage
Keep the tin sealed in the fridge once opened, away from light and strong smells. It's at its best within a month of opening.
